Catching up: Recipes 5-10 for 2019

Hello Beautiful People,

I hope you are staying warm. It was only really cold in the morning here this week, but I was feeling your pain with the Polar Vortex. It was a good week for soup. And I have been making soup. I have actually made 4 now. Yay. Two were from a recipe and two were just me adding what I thought would taste good.

So here we are on Super Bowl Sunday and I'm going to blog about my recipes. I'm one of those people that actually watches the game for the actual game. So if I don't route for anyone playing then I don't watch. Tonight I don't watch. lol. I have nothing against the Rams, I just don't care enough about them to watch. And I REALLY don't like the Patriots. So let the blogging commence.

Recipe #5: Soup



I had really wanted to make a Pesto Chickpea soup. I went shopping for the ingredients and swore up and down that I had a can of Chickpeas at home so I didn't get any.  When I got home I realized that I was wrong. UGH. So I made soup on the spot with what I had.

I included: Cannellini beans, black beans, corn, potatoes, zucchini, sauteed onions with garlic, a bag of frozen mixed vegetables, and a little whole wheat pasta.  It was even better than the first soup that I made.


Recipe #6: Pappardelle and Spinach


I had never heard of Pappradelle pasta. I searched and found it thankfully. It is an egg/wheat pasta. And it's expensive. When you're used to buying pasta that is a dollar or two it was shocking to see this pasta at $8. What? I passed by the pasta on two different shopping trips because I just couldn't bring myself to spend that much on a pasta that I had never made. And then I found it on sale and it was on.

The recipe also called for spinach and ricotta cheese. Easy enough. It wasn't specific about the spinach so I bought some frozen spinach because I didn't know when I was going to make it.

I liked it, but I think the next time that I make it, I will saute fresh spinach to add and maybe put a little garlic in it. I also found a similar Amish pasta that is smaller (and half the price) so I will try that.

Recipe #7: Pesto and Chick Pea Soup



Well I did finally go get some chickpeas and I made the soup. Hooray!  I did adjust it a little though.

The recipe called for chickpeas, fava beans, peas, green beans, Rosemary, and the little soup pastas. I skipped the fava beans and included another bag of mixed vegetables. And instead of the soup pasta I added a little whole wheat rotini. I also opted to skip the pesto and sprinkle on some parmasan.

This was so good. The rosemary gave it so much flavor. I will definitely be making this regularly.

Recipe #8: Soup


I wasn't planning on another soup, but I was starting to get addicted. And I didn't have a recipe in mind when I was shopping. I just went with my gut by then. 

This soup that I made on Friday had Cannellini beans, black beans, corn, potatoes, onions with garlic, frozen soup mix vegetables, and green beans. Of course I have gotten obsessed with the rosemary so I added that too. It's spectacular and so full of flavor. 

Recipe #9: Eggs with Spinach, Sun-dried Tomatoes, Daikon Radishes, and feta



I really needed a day of rest today so I stayed home and watched Aunt Carol's church online while I had my breakfast and coffee. I thought about eggs and avocado toast, but I wanted to switch it up a little. When Ms. Lindsay introduced me to daikon radishes she mentioned that she cooks them with eggs. So I threw this together this morning. I had no idea if I would like it or not.

I did.

I mixed eggs, spinach, sun-dried tomatoes, daikon radishes, and  little feta cheese. It was so yummy. Next time I will add artichokes. Mmm...

Recipe #10: Roasted Ratatouille 





I did it!  I put on my big girl panties and tackled a recipe with eggplant. Hooray!  I love eggplant, but I have been terrified of making it on my own. I have heard stories of how it can go wrong. So I figured I would try it in a Ratatouille.

The recipe called for red peppers, eggplant, onion, garlic, and tomato sauce. I added zucchini and potatoes (just a couple little ones). I also used my frozen chopped onions again because I refuse to cut an onion. With my strong sense of smell I will smell it on my hands all day.

The recipe said to cook it at 475. That was so hot. The total cook time was 90 minutes and it looked like it was starting to burn at 30. So when I took it out to add the sauce I turned the temperature down a little. Good call.

I didn't have the thyme to add. I forgot to get it. I added a little garlic seasoning and it was DE-Licious.  YAY. GO ME!

I'm really proud of these recipes. In fact I can't wait to try the next one. I haven't even decided what it is, but I'm jazzed about cooking. And I'm not even excited to eat out anymore. It's so much better at home.
